This weekend I got crackin' once again and made Cara some acorn and butternut squash, green beans and sweet potatoes. Needless to say we are well stocked up for awhile! I am having a lot of fun with this, and all of the bags of baby food (about 120 one-ounce cubes) above cost me a whopping $9.74. And the time it took was minimal. The squash and potatoes baked for 40 minutes, and the blending and storing takes maybe an hour. And I got to taste some delicious fall favorites while I was blending (I LOVE acorn and butternut squash), and Greg got some quality time with our Care Bear.
I also found a great Vodka sauce recipe which I made for dinner last night. I ate two plates of pasta which NEVER happens, but it was just that yummy! In addition to the recipe below I added some basil, pepper and 2 cloves of garlic.
Ingredients:
- 1/2 cup butter (I used margarine)
- 1 onion, diced
- 1 cup vodka
- 2 (28 ounce) cans crushed tomatoes
- 1 pint heavy cream (I used 1/2 heavy cream & 1/2 skim milk)
Directions:
In a skillet over medium heat, saute onion in butter until slightly brown and soft. Pour in vodka and let cook for 10 minutes. Mix in crushed tomatoes and cook for 30 minutes. Pour in heavy cream and cook for another 30 minutes. Makes 10 servings.
This recipe does take some time to make, but it is well worth it in the end. It is not really figure friendly, but I like to indulge every now and then! I only used margarine and skim milk because I didn't have enough of the "real stuff," and it was still delicious. We have had an unopened bottle of vodka for 3 years (Greg got it as a groomsman gift!) and we're just not vodka drinkers, so I thought I would try some homemade sauce. And I can't wait to eat the leftovers for lunch...
